Recommended brewing method
To brew Jin Jun Mei in Gongfu style, heat water to 85-90°C (185-194°F) and warm your gaiwan. Use the single serving size (0.21oz) of tea for a 150 ml gaiwan. Rinse the leaves briefly, then steep for 10-20 seconds for the first infusion. Pour into small cups. Increase steeping time by 10-20 seconds for each subsequent infusion, enjoying multiple infusions. This method enhances the tea's rich, complex flavors with notes of honey, fruit, and a slight smokiness.
