Responding to the current season, the tea to taste this time is Bi Luo Chun(碧螺春) — one of China's top ten famous teas. We will taste this year's and last year's pre-Qingming (明前) Bi Luo Chun during each session and compare the two.
Harvested in spring, Bi Luo Chun is a kind of green tea. The pre-Qingming Bi Luo Chun has tender buds and delicate aromas. It has a higher concentration of amino acids and lower levels of catechins, making its taste sweeter and more complex.
Let’s take a sip of Bi Luo Chun, watch its buds sink and stretch, let the tea soup linger in the mouth, swallow it slowly, and experience its sweetness and fragrance!

Just like saying “I like drinking tea” without specifying the kind of tea from the five general categories is insufficiently sophisticated, liking Chinese tea culture without specifying a dynasty feels equally unsatisfactory. Song Dynasty is probably the most important periods for Chinese tea culture, because it bears the root of the unspeakably subtle aesthetic of tea.
Dian Cha is a popular tea making technique in Song. It involves grinding tea cake into tea powder and whipping the mixture to give an impressive milky froth. People drink Dian Cha while appreciate the froth art. Originally started as a part of the ritual in Buddhist temples, the practice was further refined by Sen No Rikkyu in Japan, and even finds its contemporary revival in latte art.
This elaborate way of making tea gives rise to the sark-glazed Jian tea bowls, which have remained in popular, and the “oil-spot” Jian bowl is still the most coveted tea bowl in Japan. Unlike the heavily oxidized teas we get used to today, most tea in Song were white or budding green, and the dark tea bowls create a pleasing contrast to elevate the visual effects.
Participants will also have the opportunities to make Dian Cha by themselves.

冰岛茶是以所在地理位置命名的。冰岛茶,是最珍贵的云南普洱茶之一,它是典型的勐库大叶种乔木茶,长大叶、墨绿色,叶质肥厚柔软、茶香浓郁,非常独特,是勐库茶的极品、也是云南普洱茶的品。
冰岛是勐库地区海拔最高的傣族寨,也是勐库地区唯一一个高山上的傣族寨,属于亚热带山地季风气候,干湿季分明,昼夜温差大,立体气候突出,年日照2400小时左右,年平均气温18℃,境内降水丰富,坝区年平均降水量1065毫米,山区年平均降水量1700-1900毫米。全寨房屋坐北朝南视线开阔,不下雪也无冰,四季如春,葱葱绿绿,水源充足,土地肥沃。
冰岛古茶树历史悠久,据史料记载,在明代成化二十一年(1485年),当地傣族土司派专人来冰岛栽种茶树,至今已有五百多年。在1904年之前,冰岛茶的地位极高,是勐勐土司的贵族茶园明清时期勐勐的茶种培育基地;现代更是我国国家的茶叶良种培育基地、引种基地,现已成为中国大叶种茶的最佳品种,像现在广为人知的凤庆大叶种就是以冰岛(勐库大叶种)为母本引种培育出来的优秀品种,滋味及口感也别具特色。
首先,物以稀为贵。冰岛茶每年的产量稀缺,品质又是整个临沧茶区最好的。冰島茶香气高雅,回甘迅猛持久,茶汤绵柔,汤体鲜活,入口富于变化,唇齿生津明显,有独特冰糖甜韵,余韵经久不消,呼气如冰如蜜,茶气内敛而有力,尾水甘甜不掉。深受爱茶人追捧,以致供不应求,所以价格居高不下。

Da Hong Pao, aka Big Red Robe is a Wuyi Rock Tea produced in Wuyishan, Fujian Province. The tea tree grows in the cracks of the rocks and has the reputation of being the “king of tea”. It is on the exclusive list of 'China's Top Ten Famous Teas'.
Dahongpao is a typical Wuyi Rock Tea. It is the most popular of the rock teas. The shape of Dahongpao is thick and big. It is a powerful tea which even after the tenth brewing maintains a beautiful fragrance.
This Da Hong Pao tea brick is made from the Gold Medal Award winner from Tianxing Village. Its aroma is rich and mellow. The tea is sweet and smooth and has a slight acidity. Don't miss the woody and fruity fragrance which clings to the bottom of the cup.
